A first-year student at Ealing’s University of West London has been recognised among the UK’s leading young pastry chefs after winning a prestigious national industry award.
Charlotte Vicars, who is studying BSc Culinary Industry Management at the university’s London Geller College of Hospitality and Tourism, achieved the Royal Academy of Culinary Arts’ Annual Award of Excellence after competing in the pastry final hosted at the university.
The awards recognise chefs, pastry chefs and waiters aged under 26, and are regarded as one of the hospitality sector’s top honours.
During the final, Charlotte had five and a half hours to complete a series of demanding tasks designed to test technical skill, creativity and composure under pressure. These included producing a large Easter-themed chocolate showpiece, praline bonbons, hot cross buns and seasonal trifles.
Charlotte said: “I am incredibly grateful to have achieved the award. It was a pleasure to serve nationally renowned chefs, and it has built my confidence while encouraging my creativity and revisiting traditional pastry skills.
“It would not have been possible without the support of the university, kitchen staff, lecturers and my mentor Ben Christopherson.”
Ben Christopherson, senior lecturer in patisserie and confectionery at UWL, said Charlotte’s success reflected “exceptional dedication, technical ability, and commitment to her craft”.
Charlotte will receive her award at a ceremony at Claridge’s on 28 July 2026, where the Young Pastry Chef of the Year will also be announced.
